The influence of different nitrogen dosage on nitrate accumulation in vegetables was investigated. The experimental results showed that the nitrate contents in Chinese cabbage and tomatoes increased with the nitrogen dosage increase.With the same fertilizing level, the nitrate content in Chinese cabbage was hundred times of that in tomatoes. This result inllustrated that the leafy vegetables enriched nitrates more easily than eggplants and fruits.
